Basic cake batter

The first time I baked a cake was with my grandmother. I was maybe 8-9 years old ans she took me and my cousin to her house for a day and I remember backing cookies, biscottis and a cake. Till this day, the fondest memory I have of her is baking with her. I think that’s why when I baked my first cake, I instantly fell in love with with it.

The first time I baked a cake all by myself, it was for one of my coworkers birthday, I used the following recipe, but instead of baking it in a cake pan, I made cupcakes out of them. It is always important to have a basic vanilla cake batter because once you have mastered this, you can turn it into anything you want.

I use this batter as the basis for almost all of my cakes/cupcakes. It’s as easy as preparing this batter and adding different ingredients to change your cake. Ex: You can add lemon zeste and you will have a lemon cake.



♥ 5 eggs

♥ 2 cups of sugar

♥ 3/4 cup of mazola

♥ 2 teaspoons of baking powder

♥ 2 teaspoons of vanilla extract

♥ 1 cup of milk

♥ 2 cups of flours



  1. With the rack in the middle position, preheat the oven to 180 °C (350 °F). Butter and line the bottom of your pan with parchment paper.
  2. In a bowl, combine the flour and the baking powder.
  3. In another bowl, beat the eggs, sugar, mazola and vanilla with an electric mixer for 2 to 3 minutes. At low speed, add the dry ingredients alternately with the milk and beat until smooth.
  4. Pour the batter in your pan and bake for about 35 minutes, or until a toothpick inserted in the center of the cake comes out clean. Let cool. Unmold and let cool completely before decorating or serving.
